It is vitally important to get all our nutrients from foods that are as closely God made as possible. But it is also important HOW we cook those foods too. Overcooking our veggies and meats for a long time, at a high temperature can actually start to degrade the good ingredients we are trying to consume. Many vitamins are sensitive to heat, so anything over 300° F, like in pan frying and grilling, can do several things to diminish the good we are trying to do for ourselves. 1- as I said above, this can decrease the vitamins in our foods so we are not absorbing all we think we are, 2- overcooking can make it more difficult to metabolize the foods, which causes them to just sit in our gut making more problems for us than helping, and 3- with certain veggies and all meats, if we burn or char them, this may cause carcinogens to form. Thankfully, I have read that one way to reduce this last problem is to marinate our veggies and meats before we cook them.
Having said all this, the tip for today is to “Go for the Gold.” We want to cook our foods until they are golden, but not burned. As with so much in life, there exists a narrow window where we can have the optimal outcome. We do not want to live in one extreme or the other. In this case, we do not want to eat raw meat, for instance, but we should not burn them either. Life is all about finding a balance, and the best way to do this is to continue to be informed.
